I haven't been around the house much lately, so have neglected shopping for food. Today, I went to the grocery store for a few things to make fried rice. I also got ingredients for hoppin' john, which I'll probably make in a few days. Before that, let me lay down some hardcore Columbo investagative research on you...
The Coconut Blend at Phan's...revealed!. Several of you have been there and had this amazing drink and wondered: what the hell makes this drink taste so good? I know we've had a few discussions about it and the only thing we can decide on is that it's really fuggin good. Anyway, I went in there recently after doing battle on the 5-10 tables at Potowotomi. As I was alone, I sat at the bar and watched Elvis make the drink. So, here goes:
1 packet (plastic container) of coconut meat/water.
condensed milk (poured in no specific amount)
1 scoop of sugar
ice
Well that's it. Not like it's a revelation that condensed milk is the food of the gods.
Anyway, on to my fried rice recipe:
Contrary to what people may know, fried rice is more about getting rid of crap in your fridge than it is about making some gourmet dish. Most things that you could imagine tasting ok in fried rice probably are. That includes most vegetables and any meat.
You will need:
vegetable oil
4 eggs, beaten
green or red chili peppers, chopped (optional but recommended)
onions (2 small or 1 bunch of green onions)
2 cloves of garlic, minced
vietnamese fish sauce (or soy sauce) to taste, at least 1 T.
1 T sesame oil
3-4 cups of cold cooked rice (preferably a day old)
1 cup of chopped meat
1/2 cup of chopped cooked veggies (I use frozen mixed veggies. adds nice color)
a wok (not a non stick one). If you are using a non stick one, obviously use a plastic spatula. Also, know that my grandmother is frowning.

Heat the wok on high. Trust me, your kitchen doesn't have the capability to make that thing hot enough so go nuts. Once it is smoking, add a bit of oil and spread around. Scramble the eggs quickly, and set aside once they are not liquid anymore. Wipe out the wok with a paper towel.
Heat wok again. Pour oil in. Fry chilis, garlic, onions until onions are transluscent. Add the meat and stir until homogenous. Add rice, sesame oil and fish sauce, and mix well. It's important to stir constantly to make sure that everything is well mixed and nothing sticks to the bottom. Right before you are ready to serve, add the veggies and stir again. Then add the cooked egg and stir. If you feel like impressing people, top with some thinly sliced green peppers (the green part). Enjoy.
Fried rice reheats really well. I don't know if it freezes, but if you make it right, you won't want to freeze it because you'll just eat it over a few days. As mentioned before, there aren't too many things you could put into fried rice that would be wrong. Furthermore, having this stuff on hand will help you make friends and influence people. It may also help your poker game.

Oh, quick blurb about last weekend...went out for dinner at Louise's with Snoop Dark and Johnny. After a carb-filled meal, we were all sleepy but got costumed up and headed to Jenny's house for a Halloween party. Then, we met Tanessa and Tracy out downtown for a cocktail before ending up with the Foys at RC's. I have photos but haven't gotten around to popping them up yet. I will soon.
